Pecan Pie Muffins

Hey guys, here is another recipe I made during my moms annual Christmas Cookie Bake! Enjoy! :)


1 Cup of Packed Light Brown Sugar

1/2 Cup All-Purpose Flour

2/3 Cup of Softened Butter

2 Beaten Eggs

1 Cup of Chopped Baked Pecans


Prep & Bake

Grease and flour 18 mini muffin pan. In a mixing bowl, stir together brown sugar, flour, and pecans. In a separate bowl beat the butter and eggs together until smooth, then stir contents into the dry ingredient bowl until combined. Finally spoon the batter into the prepared muffin pan about 2/3 of the way full.

Bake at 350 degrees for 20 to 25 minutes. Cool on wire rack when finished.
